#No Ham Left Behind........................from Rico

I suppose a lot of people have "left over" ham after celebrating Easter.

I am calling this "Southren' Bourbon Rarebit" and it's not just for breakfast anymore, but it just made a mighty fine breakfast for me.
 
Toast something (bread, a roll, whatever) and plate it.
Put a slice (or two) of ham onto the toasted whatever.
 
Lightly whip an egg, add grated cheddar cheese, yellow mustard, a splash of lemon juice, a little melted butter, and a splash of (I used Jack Daniel's 'Tennesse Honey' bourbon, but regular bourbon works fine too) bourbon, and mix. [Double this for two people, or if you're hongry.]
- Nuke it for 30 seconds, stir, another 30 seconds, stir, and maybe another 15 seconds until you have a very thick, lumpy 'egg gravy' to pour over the ham & toast.
- Sprinkle with coarse ground black pepper and enjoy.
 
What's not to like about the South?
