Club Sandwich....

I am trying to get my two favorite 'bars' to put a club sandwich on their menus. Anyone got a recipe for the best one?

Bearing in mind throughout that this is purely one man's opinion...

First candidate: the traditional ham/turkey/cheese club. Start with three thin slices of moderately toasted bread. (Club sandwich bread should not be terribly "special;" prefer ordinary white or whole-wheat bread from a reliable baker.) Mayonnaise on one slice, then a thin layer of sliced turkey breast, a single slice of mild cheddar atop the turkey, and a layer of sliced tomato atop that. Add the second slice of toast, a thin layer of sliced ham atop that, a single slice of mild cheddar, and a layer of lettuce. Mustard the third slice of toast -- a mild mustard is best here -- and cap the sandwich with it. Put toothpicks near the four corners, slice through both diagonals, and serve.

Second candidate: the turkey and bacon club. This one is simpler, and has an undeniable appeal for its uncompromised bacon flavor. Again, start with three slices of moderately toasted bread. Mayonnaise on one slice, then a thin layer of sliced turkey breast, then two strips of crisply fried bacon and a layer of sliced tomato. Mayonnaise a second slice of toast and use it to close the bottom layer of the sandwich. Now add two more strips of crisply toasted bacon, another thin layer of sliced turkey breast, and a layer of lettuce. Mayonnaise the third slice of bread and cap the sandwich. Once again, toothpicks near the four corners of the sandwich, slice through both diagonals, and it's ready to serve.

Beware the tendency to overstuff the sandwich. The enjoyment of many a club sandwich is spoiled by having it come apart in one's hands due to overstuffing. Another common mistake is to overdo the lettuce and tomato, which can also cause "architectural failure." As Epictetus has told us, moderation in everything!
