Question

Anyone got a good Meatloaf recipe?

Yah.

half ground pork, half ground beef
diced-to-minced onions to taste
garlic
steak seasoning
salt and pepper
enough bread crumbs or panko to form a loaf (1 beaten egg optional)

Form into a loag and place in cemter of pizza pan
Cover top with raw bacon and squiggles of ketchup

325 deg. until thermometer hits 170 internal
Let it rest 3-5 minutes before slicing. Use this time to fight over the bacon.

Make enough for meatloaf-onion-and-horseradish-on-rye sandwiches the next day.

Enough ground meat
Some diced onion
Salt to taste or to cardiologist's
shreik
Freshly ground black pepper to taste.
Ketchup to thourughly wet all the
above
Pack into a loaf pan.

Bake it 350 F until done.

You didn't ask for it, but there it is--wife's meat loaf. (Note it won't congeal into slabs, but that is OK with me. Serve with baked potatoe and a vegetable of choice.)

Moderation. That sucks.

I personally like simple: burger, oatmeal, onion soup mix, bacon on top.

ground pork
ground beef
garlic seasoning
onion (diced or powdered)
green pepper (chopped fine)
2 apples (peeled,cored and diced)
dash or pinch of cinnamon (not a lot needed)
w.sauce
a-1 sauce
1 8oz can basil and garlic tomato paste

Mix all of the above ingredients together. Form into small loaf style and make a space on top to add ketchup(this way it makes it easier to slice and make as sandwiches the next day)
Bake at 375 to 400 approximatly 45 minutes, or until nice and browned. remove from oven, spread ketchup in top, place back in oven for 8 minutes.
The apples help absorb the grease, but provides added flavoring to the pork. It is super easy to make, and all seasoning is based on taste of cook.

oops forgot an ingredient! *giggling* make sure to toss in one package of crushed crackers. I use ritz.

I was recently sent this one which sounds good:

Bobotie

No self respecting South African housewife does not own (and
treasure!) a favourite bobotie recipe.

* 2 tablespoons vegetable oil
* 2 onions, peeled and sliced
* 2 1/4 pounds good quality lean ground beef
* 1 thickish slice of white bread
* 1 cup milk
* 1 tablespoon medium curry powder (or hot for the hale and brave)
* 1 1/2 tablespoons sugar
* 2 teaspoons salt
* freshly grated pepper (about a half teaspoon)
* 3/4 teaspoon turmeric
* 1 1/2 tablespoons malt vinegar
* 1/2 cup seedless raisins
* 2 tablespoons strong chutney
* 2 bay leaves (or fresh lemon leaves if available)
* 2 medium eggs




METHOD

Preheat oven to 350°F.

Heat oil in medium sauté pan. Stir in onions. Cook over medium
heat until transparent. Add ground beef. Cook until lightly browned
and crumbly.

Soak bread in half the milk, squeeze out excess milk and mash
with a fork - DON'T TOSS SQUEEZED OUT MILK! Pour it straight back
into remaining milk. Set milk aside, and ad pulled-apart bread to the
meat mixture.

Add curry, sugar, salt, pepper, turmeric, vinegar, raisins,
chutney to the beef mixture. Spoon the mixture into a greased baking
dish, and place bay leaves on top.

Bake for 50-60 minutes in preheated 350°F oven.

Beat egg with remaining milk and pour over mixture approximately
25 - 30 minutes before end of baking time.

Serve with steamed rice (traditionally yellow!) and extra chutney.

Pure South African comfort food! Especially nice in winter, or
cold with a salad in summer.
